Most AU cafés use 4–8 kg of beans per week per espresso machine. Quiet suburban cafés can sit closer to 2–3 kg, while busy CBD venues regularly push past 12 kg/week and typically run a second grinder.
Australian specialty cafés most commonly dose 18–22 g per double shot, with 19–20 g being the sweet spot on most modern espresso machines. Single-origin and lighter roasts often sit at the higher end.
A 5% wastage allowance is a safe default for an established café. New baristas, dialling-in single origins or running multiple grinders can push that to 8–10%.
